Chewy Chocolate Chip Cookies



 Although Cookies wouldn't immediately spring to mind for a Christmas recipe, they are important. The classic cookies and milk often eaten over the holiday where all diets and healthy eating plans are abandoned for a few days, or left as a desert for Santa once he's finished his meal.


225g soft butter
225g caster sugar
1 egg yolk
a couple of drops vanilla essence
250g plain flour
1/2 tsp baking powder
125g chocolate

1. Preheat the oven to 170°C/gas mark 3.
2. Cream the butter and sugar together, then add in the vanilla essence and egg yolk.
3. Sieve in the flour and baking powder and stir in the chocolate. (I prefer using eating chocolate (cadburys or galaxy) and cutting each square in half over chocolate drops. I think it works better with a sweeter taste)
4. Shape into a cylinder and cover with cling film. Leave in the fridge for an hour to firm up.
5. Once the hour is up, cut the cylinder into slices and place onto a lined baking sheet. Bake for 20-25 minutes.

makes 15-20 individual biscuits
