Parsley and Cheddar Cupcakes


 Parsley and cheddar cupcakes. Right. Sounds a bit funny but trust me; they're tasty. They're not sweet or anything but they're not bread. Kind of weird. Anyway, my sister's boyfriend got me a book entitled '200 cupcakes' which has a section for savoury cupcakes. I saw cheddar and chive mini cupcakes and instantly decided to try them out. Problem number one - no chives, problem number two - no mini cases. And so with a little bit of tweaking, in a couple of other areas too, I present to you my version of their recipe.

You'll need:
200g self raising flour
1 teaspoon baking powder
Pinch of salt
4-5 tablespoons of fresh parsley, chopped up
75g grated white cheddar cheese
1 egg, beaten
8 tablespoons milk
50g butter

Method:
 1. Preheat the oven to 200°C/392°F. Stir the flour, baking powder, salt, parsley and cheese together in a bowl. Keep a little bit of cheese back.
 2. Melt the butter in the microwave, it has to be a liquid consistency. In a separate bowl mix the butter, milk and egg together.
 3. Combine the wet ingredients with the dry until you have a sticky dough. Divide this mixture up into twelve cupcake cases or a cupcake pan that has been made non stick by butter and flour. Then sprinkle the remainder of the cheese over the top (this is where the lovely orange colour comes from!)
 4. Put in the oven for 12-15 minutes until pale golden. Allow to cool, add butter if desired and enjoy!
